Sambar + Fallow - Effective Deer management

Deer were introduced into Australia from Europe in the 19th century as game animals. Deer are a major emerging pest problem, causing damage both to the natural environment and agricultural businesses. Populations are expanding and deer are invading new areas.

Feral deer can have major impacts:

  • destroying native vegetation by trampling plants, grazing, and ring-barking young trees
  • fouling waterholes
  • causing soil erosion
  • spreading weeds
  • potentially transmitting diseases such as foot-and-mounth disease.

Hunting + Processing

Hunting Deer doesn't start and end with the pull of a trigger, it starts with planning and ends when we have vacuum sealed the last bag of meat.

Typically we hunt Deer at night using the latest in Thermal Optics, ensuring that Deer are at their most relaxed and natural state.  The Deer are then field dressed, hung in our cool room for up to 7 days and then professionally butchered and vacuum sealed.  We offer meat first to our land owners, including sausages, back straps, mince, roasts etc.

Naturally there are parts of the Deer that can not be harvested for meat, these items are donated to a local bone artist who reuses them in her art.  We strive to have zero wastage from our Deer as they are not only a source of food, they are also a magnificent creature.
